We grow our own raspberries in our backyard.
We have the type that produce berries twice a year.
Double the pleasure!

I am always on the lookout for a good raspberry recipe.
Instead of something new,
this time I modified a tried and true recipe.
It was a success.
And it is very easy.
And I planned on taking pics
of the finished recipe for this post.
Real life got in the way
and I haven't had time to make it.
So I was going to make it just now
and the cream cheese is gone.
At least I won't have to worry
about the calories of eating it now.
I guess I'll just have to pick more berries.

Raspberry and Cream Pie
Prepare a 9" Pie Plate
Combine the following ingredients:
3/4 cup flour
1 teaspoon baking powder
3 tablespoons dry vanilla pudding*
(*I've used both instant or cook variety
and don't see a difference.)
3 tablespoons soft butter
1 egg
1/2 cup milk
Pour batter into the pie plate.
Cover batter with 15-20 oz frozen, drained, save juice*
OR 2 cups fresh raspberries.
Beat together for 2 minutes:
8 ounces cream cheese
(Either regular or low fat.)
1/2 cup sugar
Saved raspberry juice* if using frozen raspberries
(If you don't have raspberry juice
you can thin with a few tablespoons water.)
Spoon the cream cheese mixture over the raspberries
to within 1 inch of the edge of the pie plate.
Bake 350 for 30-35 minutes
When cool, top with dark chocolate shavings. (Optional)

can't decide which is the yummiest, the pie or these photos...
When I was a girl there was a house in my neighborhood that had the entire yard full of raspberry bushes. I'm sure they shared more than they would have liked with the children from town....but they were so delicious.

Yummm. I would've liked to have tried this recipe a couple days ago. I made a raspberry bread which was more like a cake and would be a great base for a pudding. It did taste good with vanilla ice cream.

Sounds delicious. I just noticed raspberries at our Farmer's Market this past week. Must plan a dessert.
Wish I lived in a climate where my garden could produce raspberries twice a year! I love them raw as well as cooked. ;)
